Tahini choc chip cookies (Gluten free, no added sugar)
These gluten free, no added sugar, Tahini Chocolate Chip Cookies are the perfect balance of chewy, nutty, and chocolatey. Made with wholesome ingredients, they are gluten-free and naturally sweetened with dates, making them a healthier alternative to your usual cookie.
Ingredients
250g dates
200g tahini
1 egg
250g almond meal
1 tsp bicarb soda
200g dark chocolate chips
Sesame seeds
Method
Blend dates in a food processor until smooth. If your dried dates are too dry, try soaking them in warm water for 10 minutes.
Add the tahini to the dates and blend until combined.
Add the egg and blend again until smooth.
Add the almond meal and bicarb soda, and blitz to combine.
Stir in the chocolate chips and blend briefly to mix.
Roll the dough into 12 even balls or flatten into 12 cookie shapes. Press one side of each cookie into sesame seeds.
Place the cookies on a baking tray, sesame seed side up, and bake at 160°C for 10 minutes.
Allow the cookies to cool before enjoying!
