This Healthier Pistachio, Chocolate, and Rose Slice is a perfect balance of indulgence and nourishment. With the nuttiness of pistachios, the richness of dark chocolate, and the subtle floral aroma of rose water, this slice is sure to impress. Ingredients

Base:

  • 200g desiccated coconut

  • 275g oats

  • 200g pistachios

  • 300g raisins

  • 2 tbsp rose water

  • 100g melted butter

Ganache:

  • 400g dark chocolate

  • 2 tbsp extra virgin olive oil

  • 100g Greek yoghurt

Topping:

  • 100g chopped pistachios

Instructions

1. Make the Base:

  1. Preheat your oven to 160°C (fan-forced).

  2. In a food processor, blend the desiccated coconut, oats, pistachios, and raisins until they form a powder.

  3. Add the rose water and melted butter, mixing until well combined.

  4. Press the mixture evenly into a lined baking tin.

  5. Bake for 20-25 minutes, or until the top is golden brown. Remove from the oven and allow to cool completely.

2. Prepare the Ganache:

  1. Melt the dark chocolate using a double boiler or microwave, stirring frequently to prevent burning.

  2. Once melted, mix in the extra virgin olive oil and Greek yoghurt until the ganache is smooth and glossy.

3. Assemble the Slice:

  1. Pour the ganache over the cooled base, spreading it evenly with a spatula.

  2. Sprinkle the chopped pistachios on top for a crunchy finish.

4. Set and Serve:

  1. Place the slice in the refrigerator for at least 2 hours, or until the ganache is firm.

  2. Once set, slice into squares or bars and enjoy your homemade treat!
