125g coconut oil
2 eggs
125g full-fat Greek yoghurt
250g apple puree or unsweetened apple sauce
250g rolled oats
½ tsp bicarbonate of soda
½ tsp salt
2 tsp cinnamon
1 tsp ground nutmeg
1 tbsp vanilla extract
Instructions
Prepare the Bundt Tin: Coat your bundt tin with butter and dust lightly with flour to prevent sticking. Preheat your oven to 160°C (320°F).
Make Oat Flour: Blend the rolled oats in a food processor or blender until they reach a flour-like consistency.
Whip the Wet Ingredients: In a stand mixer, whip the eggs and coconut oil until light and fluffy. This step creates air in the batter for a light texture.
