Gluten-Free Red Bean Cookies – A Naturally Sweet Lunar New Year Treat

These gluten-free red bean cookies are a wholesome take on a festive classic, featuring a soft, buttery dough filled with naturally sweetened red bean paste. With no added sugar and a melt-in-your-mouth texture, they’re perfect for sharing with loved ones during the holiday.

  1. Prepare the Dough – In a stand mixer fitted with a paddle attachment, mix the gluten-free flour and butter on low speed until the mixture resembles bright yellow grains of sand.

  2. Incorporate the Red Bean Paste – Add 400g of the red bean paste and the baking powder. Mix until well combined.

  3. Add the Egg – Mix in the egg until the dough comes together.

  4. Shape the Cookies – With wet hands, roll the dough into 15 equal-sized balls (about 60g each) and flatten them slightly onto a lined baking tray.

  5. Fill the Centers – Use the back of a 1/2 tsp measuring spoon to press a well into the center of each cookie. Spoon or pipe the remaining red bean paste into the wells.

  6. Bake – Bake at 160°C for 10-15 minutes or until the edges just start to brown.

  7. Cool & Serve – Allow the cookies to cool completely before serving.
