Why You'll Love These Cookies
Gluten-Free & Naturally Sweetened – Made with gluten-free flour and filled with my homemade red bean paste, sweetened only with dates.
Simple Ingredients – No complicated steps or hard-to-find ingredients.
Perfect for Lunar New Year – A delicious way to incorporate traditional flavors into your celebrations.
Ingredients
300g gluten-free flour
200g butter
450g red bean paste (see my blog post for a naturally sweetened red bean paste using dates)
1/2 tsp baking powder
1 egg
Instructions
Prepare the Dough – In a stand mixer fitted with a paddle attachment, mix the gluten-free flour and butter on low speed until the mixture resembles bright yellow grains of sand.
Incorporate the Red Bean Paste – Add 400g of the red bean paste and the baking powder. Mix until well combined.
Add the Egg – Mix in the egg until the dough comes together.
Shape the Cookies – With wet hands, roll the dough into 15 equal-sized balls (about 60g each) and flatten them slightly onto a lined baking tray.
Fill the Centers – Use the back of a 1/2 tsp measuring spoon to press a well into the center of each cookie. Spoon or pipe the remaining red bean paste into the wells.
Bake – Bake at 160°C for 10-15 minutes or until the edges just start to brown.
Cool & Serve – Allow the cookies to cool completely before serving.
